
Overnight Pumpkin Spice Crockpot Oatmeal

This weekend the weather turned. Ahhhhhh, it finally feels like fall. 🍂🍁. Time to pull out some of those pumpkin recipes! 🎃
This is a great warm breakfast, that goes together fast, and is sure to please! Simply take a few minutes to start it the night before, and with just a couple minutes of work in the morning, you’ll have a warm, nourishing breakfast ready in no time. Also, by soaking it overnight, it increases the digestability of the oats, and reduces anti-nutrients and cooking time.
Overnight Pumpkin Spice Crockpot Oatmeal
Serves 4
Mix together in crockpot and soak for 8-12 hours or overnight:
1 1/2 cups rolled oats
1/2 cup hulled buckwheat (can substitute 1 cup extra oats, if desired)
3 cups water
1/4 cup yogurt, whey, kefir, etc (I like to use sourdough starter for best digestability)
In the morning add:
1 cups pumpkin puree
1/4 cup butter
1 cups milk
1/4 cup sucanat (or coconut sugar, erythritol, etc)
1/4 tsp salt
1 1/4 tsp pumpkin spice *or*
1 tsp cinnamon
1/8 tsp allspice
1 Dash each ginger, cloves & nutmeg
1/4 cup raisins (optional)
When you wake up in the morning, add additional ingredients, turn crockpot on low, cook for 2 hours and serve when ready! (It would go great with a hot cup of Snappy Ginger Tea!)
I double the recipe and use my Instant Pot, on the slow cook setting.
Alternatively, you can do the soaking in a pot on the stove. In the morning, when you are ready, turn on the heat, and simmer for 10-12 minutes.
