Best. Ever. Potato. Soup!

Okay, so not to brag or anything, but this here is the best ever potato soup recipe!  The. Best. Ever. 

** Don’t be mislead by the unfortunate lighting in my pictures, it actually looks and tastes really good!  For some reason, I just could not get good pictures!  I’ll have to remember to try again the next time I make it, and update this post.**

  I tried several different recipes, and as usual, mixed them all around and then added some of my own special touches, and  “Voila” - Phenomenal Potato Soup!  I could eat this soup all day long.  Yum!  This soup also reheats really well, so make sure to make a good amount so you have plenty of leftovers.  ;) So, without further ado, here is the recipe….


Best Potato Soup


3 cups peeled & chopped potatoes

1/2 cup chopped celery

1/2 cup chopped onion

1 qt chicken stock

1 T. bacon grease (or butter in a pinch)

1 tsp dried parsley

1 tsp salt

1/4 tsp ground pepper

---------------

2 T. flour

1 1/2 cups milk

1 1/2 cups shredded cheddar cheese

1 cup chopped ham or bacon

2 t. dried minced garlic

1/2 - 1 tsp. turmeric, optional

pinch cayenne pepper

salt & pepper to taste


Place first 8 ingredients in crockpot, and cook on low for 4 hours.  Add the rest of the ingredients and cook for another hour, stirring to make sure cheese is all melted and incorporated.  

*For a variation, you can add one can of corn, and it becomes corn chowder, Yummy!!!


Well now I’m hungry, so I think I’m going to go make myself some of this fabulous soup!


Update- I now make this in my instant pot, on the “slow cook” setting.  I LOVE my instant pot! ❤️❤️❤️
